Rose + Reishi Brownies

These flourless brownies are filled with the medicinal beings and prowess of cacao, reishi mushroom, rose, and beets. They’re oh so lightly sweetened… and absolutely nourishing.

Let’s make them!

You’ll need:

2 eggs, room temperature

1 cup beet puree [take whole roasted beets and blend them up]

1/3 cup coconut sugar

3 tablespoons melted ghee or avocado oil

1 1/2 teaspoons vanilla extract

1 cup raw, organic cacao powder

1 tablespoon reishi mushroom powder

1 teaspoon rose petal powder

1/2 teaspoon baking soda

1/4 teaspoon himalayan salt

Drizzle for top:

1 tablespoon coconut oil, melted

1 tablespoon maple syrup

1 teaspoon cacao

1 teaspoon reishi

Preheat oven to 350 F. Grease 8x8 glass pyrex dish. In medium sized bowl, combine eggs, beets, coconut sugar, vanilla extract, and ghee/avo oil. In small bowl, combine the dry ingredients. Slowly fold the dry ingredients into the wet ingredients until completely smooth. Pour into prepared dish and bake for 25-27 minutes, or until done in the middle. Allow to cool. While cooling, mix together the drizzle and pour atop of brownies. Stick it in the fridge for at least an hour, top with rose petals or chocolate chunks and slice.
