Rose + Salmonberry Honey
If you’re wandering the PNW and see the native, wild rose [Baldhip Rose, Rosa gymnocarpa], you’ll more than likely find the Salmonberry near or intertwined. These two are an explosion of beauty, aroma, sweetness, and heart-opening goodness… if you ask me.
There are few things I find more elated to make than Herbal + Wild Berry infused honeys. Encapsulating the late Spring’s fruits for the months to come? Sign me up. I know this will be the medicine I won’t only need, but want, in the winter month’s [truth be told, I need to make many jars of these if this is to last this long].
To make, you will need:
A mason jar + lid
Raw, organic honey
A wooden chopstick or utensil
Parchment Paper
A label
Freshly harvested wild rose petals
Salmonberries [or any local, wild berry you are able to find]
Place rose petals in mason jar, filling it halfway. Fill the rest of the jar with berries. Mash and combine rose petals + berries with wooden utensil or chopstick. Re-fill the jar once more with berries. Repeat mashing. Top with honey and gentle stir to combine, ensuring no air bubbles are present and all of the contents are coated with the honey. You’ll want the mixture to be 1/2 inch below the lid. Place parchment paper on top of jar before lidding. Be sure to not screw on the lid too tightly as the honey + berries will cause some fermentation to happen.
Label your jar!

Next, put it in a dark cool place [like a cupboard]. Every day or two you will shake the jar. Tighten the lid before doing this. And then, loosen it slightly. Allow it to macerate for at least 5-6 weeks… but, it can go for a few months if you choose to!
No need to strain, you can put this concoction to use as is. On toast, in yogurt, atop of cakes, or by the spoonful.
